THE ORIGINS OF PESTO

Genoese pesto is the traditional Ligurian condiment par excellence. Its recipe is simple and precious at the same time: it is a raw sauce that preserves all the flavour of its ingredients. It is obtained by crushing Genoese basil, pine nuts and garlic, all seasoned with Grana Padano, Parmigiano Reggiano, Pecorino and olive oil. The first example of pesto dates back to Roman Empire, while the first official recipe date back to the 19th century, although it certainly draws inspiration from older sauces already popular in Liguria during the Genoese Maritime Republic.
